75% Carignan – Spice Cabinet Vineyard - Yakima Valley
25% Counoise – Boushey Vineyard - Yakima Valley
The Winemaking
Fruit was hand picked and destemmed only (no crushing). Fermented in open top fermenters and aged in 225L barrels. Only 141 cases produced.
Pairs well with butternut squash ravioli, grilled salmon, or roast turkey.
