The Wine
Written in the Stones Daedalus explores the Rocks District AVA through a field blend of Grenache and Syrah, made with the Cairdeas spirit of experimentation. Fruit was picked together and natively fermented in a 44hl concrete cone before being pressed and aged in barrel. The result reflects the distinctive character of the Rocks District while bringing Cairdeas’ own personality to the glass. Named for the Greek inventor of the labyrinth, Daedalus represents creativity, craftsmanship, and an adventurous approach to winemaking. 268 cases produced.
